Steam jacketed kettles are widely used as a substitute for stock-pot cooking. Kettle cooking is more gentle, highly consistent, and much faster than
stock-pot and other cooking methods.
Kettles are available in self-contained gas or electric models, as well as direct steam. Many models are standard with a tilting mechanism for easy removal of
liquids.
